How to make Vegan Anzac Cookies.
Mix the dry ingredients: 2 cups each - rolled oats, plain flour, brown sugar. 1 cup dessicated coconut. Wet ingredients: In a saucepan over medium heat, gently heat 250g vegan butter, 4 Tbsp golden syrup, 2 Tbsp water. When butter is melted, add 1 tsp baking soda.
Mix wet and dry ingredients. Spoon mixture onto baking tray and bake at 325 F / 170 C for 20 minutes. Enjoy!!
Here's my latest recipe! Vegan Cheese Sauce! So So easy and yummy! And Vegan! The cows say "thank you"!
Boil together 2 cups diced potatoes and I cup diced carrots.
In a blender, put
3/4 cup water,
2 tsp salt,
1 Tablespoon Lemon Juice,
1/2 cup Nutritional yeast,
1/4 tsp garlic powder,
1/2 tsp Herbamare.
Blend together with cooked potatoes and carrots.
Enjoy over pasta, veges, pizza, as a dip, and anywhere you'd enjoy cheese sauce. It is SO good! And Easy!!! You've got to try it!
Today's video is on how to make a super easy, warm, and yummy breakfast! Some kids might not know that oats are so easy to cook...and they taste really good too!
For two people, I used:
1 cup rolled oats
1 cup water
1 cup rice milk (but use what you prefer - soy, almond, coconut, etc)
1 teaspoon cinnamon (you might prefer less than that, or none at all)
2 Tablespoons coconut sugar (again, use whatever sugar you like)
Put it all together in a pot on the stove on medium-high heat, stir it, and let it cook for 4-5 minutes until it starts to boil. Then lower the heat and let it cook for another minute or two.
You can top it with banana or blueberries or any other dried or fresh fruit that you like. Mum likes to sprinkle some chia seeds on hers. Sometimes we add in some cacao when we're cooking it to make it chocolatey!
So yeah, super easy, super yum and super warm for those chilly winter mornings!
1/2 cup coconut sugar (or whatever sugar you prefer)
1/4 cup cocoa
1/2 cup dairy-free, chocolate chips
~ mix these together, then add:
1/3 cup coconut oil
2/3 cup water
1 teaspoon vanilla
~ stir until just mixed then spoon into muffin pans.
Bake at 180C/ 350F for 15-20 minutes.

Review... this was the first time that we tried this recipe. We'd rate it 7 out of 10. Two of our testers loved them, but three thought they were a little dry. Perhaps a little more coconut oil and a little less water might help. We did like how easy it was though!
